To empower Tucson’s culinary community by reclaiming our legacy of self-reliance through a food distribution system built by the community, for the community.

Why We Started

 

Our founder's vision was forged through a shared observation of what our community needs to thrive.

 

While working together at Sterns, we saw the vital role a local warehouse plays in the daily success of Tucson’s kitchens.

 

When that facility closed during the pandemic, we witnessed the immediate struggle our customers faced when they lost their local, immediate source they relied on.

We knew what it was like to have that resource, we knew what it was like to lose it, and most importantly, we saw exactly how much our customers lost alongside us.

​We know the frustration of settling for a distribution system that treats Tucson as an afterthought.

 

We feel your pain when budget constraints make supporting our neighbors feel impossible, and we hear you on the "transportation tax" that drives up your costs without adding a single bit of freshness.

 

Madrean Foods was built because we’ve listened to these struggles, and we’re here to reclaim our city's legacy of self-reliance together.

For thousands of years, the Madrean Sky Islands have stood as sentinels over our Sonoran Desert, providing life and nourishment to the people of the Tucson basin since time immemorial.

Our Game Plan:

Build the Supply Chain Tucson Deserves

Tucson’s culinary identity is a point of immense local pride, but for too long, our kitchens have been squeezed by massive, out-of-town distribution networks that extract revenue from our city.  

We are building a self-sufficient supply chain tailored specifically to the needs of the Tucson culinary community. But we cannot do it alone. This model will only work if we come together to fill this missing piece of our food ecosystem.

Together, we can create a path to secure the Tucson culinary community’s independence by reclaiming financial control, establishing local infrastructure, and institutionalizing community ownership.

Here is our blueprint for taking back our food system:

Phase One

The Seed (Available Now).
Cultivating Financial Independence
True self-reliance begins with the freedom to choose where your money goes.
  • Self-Sufficiency Starts Here: To protect our local economy, we must cut reliance on the costly outside distribution system.

  • Direct Logistics: Our goal is to develop ways that bypass these warehouses, reducing high costs, eliminating poor quality, and ensuring local accountability. 

  • Developing Local Infrastructure: We are also finding and developing relationships with the local producers, key suppliers and other stakeholders that want to help develop the Tucson Culinary Community.  

  • Better Ingredients, Less Waste: Chefs get fresher, higher-quality ingredients directly, improving plate quality and cutting waste.

  • Economic Guardianship: Cost Control offers conventional staples at competitive prices, helping local kitchens save funds to reinvest locally instead of losing capital to expensive outside distributors.

Phase Two

Building a Physical Foundation
A self-sufficient community needs its own infrastructure.
 
We are building a hub designed by Tucsonans for Tucsonans.
  • Co-Designing Our Future: This phase establishes the physical and operational base for a locally controlled food supply chain in Tucson. We want you to help us build the exact distributor you need to perform at your best.

  • The Local Hub: We are building a Tucson Warehouse that eliminates outside storage dependency, ensuring convenient access.

  • Community-Driven Supply: We use curated inventory based directly on chef input, ensuring local control over product availability and quality. You shouldn't have to just deal with what's available—let's stock what actually works for you.

  • Boosting City Revenue: Our Hub will strengthen the local economy by supporting local vendors, allowing chefs to directly source unique regional products, which increases city revenue.

  • Inside-Out Success: Empowered people build resilient systems. The final phase ensures the company's mission and legally protects community independence.

  • Guaranteed Autonomy: Through an Employee Ownership or Co-op model, we shield the resource from external corporate pressures, maintaining quality and ethical sourcing.

  • A Permanent Fixture: Sustainable Independence institutionalizes the resource, preventing degradation by outside interests, securing a permanent, reliable fixture for the Tucson culinary community.

Who are we?

Madrean Foods is the culmination of our shared history and deep-rooted commitment to Tucson’s culinary community. We came here, discovered and feil in love  with this city and it's culinary legacy.

decided to put our heads together.
Together, we bring over 20 years of experience in the Tucson Culinary Community to this venture:​
  • Armando brings 15 years of operational expertise, having previously managed the local warehouse for Sterns right here in Tucson.​

  • Keven has spent the last seven years on the ground, building personal relationships with chefs in restaurants, hospitals, retirement communities, and the unique local spots that define our city.
